Fig Honey Fizz
Ripe fig syrup and floral honey lighten into a sparkling mocktail with a Mediterranean depth of flavor.

Ingredients
- 1 oz fig syrup (simmer 4 dried or fresh figs with 0.5 cup water and 0.5 cup sugar until figs soften; blend and strain)
- 0.75 oz fresh lemon juice
- 0.5 oz honey syrup
- Soda water, to top
- Dried fig slice, to garnish
Instructions
- 1Combine fig syrup, lemon juice, and honey syrup in a shaker with ice.
- 2Shake until well chilled.
- 3Strain into a Collins glass filled with ice.
- 4Top with soda water and garnish with a dried fig slice.
