Made from the blue agave plant in Mexico's Jalisco region, tequila has an earthy, slightly vegetal character with notes of citrus, white pepper, and — in aged expressions — vanilla and caramel from the barrel. Blanco (unaged) tequila is bright and assertive, making it the natural backbone of high-acid cocktails like the Margarita and Paloma. Reposado and añejo expressions mellow with barrel time and suit stirred, spirit-forward formats.
