Ingredients

  • 1 oz smoked rosemary honey syrup (lightly char a rosemary sprig with a lighter; steep in 1:1 honey syrup for 15 minutes; strain)
  • 1 oz fresh lemon juice
  • 4 oz still water
  • Soda water, to top
  • Lemon wheel and a fresh rosemary sprig, to garnish

Instructions

  1. 1Combine smoked rosemary honey syrup, lemon juice, and still water in a shaker with ice.
  2. 2Shake and strain into an ice-filled Collins glass.
  3. 3Top with a splash of soda water.
  4. 4Garnish with a lemon wheel and a briefly torched rosemary sprig if you have a lighter handy.
