Yuzu — a tart Japanese citrus with notes of lemon, grapefruit, and mandarin — has been used in Japanese cooking and drinking traditions for centuries. Yuzucha, a honeyed yuzu tea, is a traditional winter drink, and this mocktail is essentially a cold, effervescent riff on that same combination.
