Origin & Story
Modern cocktail bars, 2010s
As zero-proof menus evolved from afterthoughts into serious offerings, bartenders began treating tea the way they would treat a spirit — with intention, layers, and technique. Chamomile, with its apple-like, honey-forward flavor, became one of the most popular tea bases precisely because it contributes natural sweetness without needing much help.
