Ingredients
- 2 oz rye whiskey
- 1 sugar cube (or 0.25 oz simple syrup)
- 3 dashes Peychaud's bitters
- Absinthe, for rinsing
- Lemon peel, to garnish
Instructions
- 1Rinse a chilled rocks glass with absinthe and discard the excess.
- 2In a mixing glass, muddle the sugar cube with bitters, then add rye and ice and stir until chilled.
- 3Strain into the prepared glass and express a lemon peel over the top.

New Orleans, mid-1800s
Often called America's oldest cocktail, it's tied to the Sazerac Coffee House in New Orleans and originally made with Sazerac de Forge et Fils cognac before rye whiskey and absinthe became standard.
